Dasheen, eddoes: Blue Food Delights

Eddoes Talkari

Ingredients
1 tbsp olive oil
5 eddoes peeled/cubed
1 potato (optional) peeled/cubed
2 cloves garlic crushed
1/4 hot pepper sliced thin—remember to leave out the seeds to control the heat
1/2 medium onion sliced
4 tbsp of salted cod pieces
1/4 tsp salt
1 tsp thyme, Spanish thyme, celery leaf, chives (chopped fine)

Method
• Peel, slice and cube the eddoes and potato pieces the same size so they cook uniformly.
• Soak the salted cod in hot water for a few minutes to rehydrate them and to release most of the salt, let drain.
• Heat oil on medium/high heat and add the pieces of salted cod, followed by the onion.
• Cook this for a couple minutes, then add the pieces of potato and eddoes.
• Stir well and cook for two minutes, then top with all the other ingredients, including the water.
• Cover pot, bring it to a boil, then to a gentle simmer.
• Allow to cook for about 25 minutes, or until the eddoes is tender and the dish gets a sort of thick soupy consistency. 

Callaloo 

Ingredients
1 bundle dasheen bush, roughly chopped
12 ochroes, sliced
1/2 cup chopped pumpkin
4 garlic cloves, minced
1 medium onion, chopped
2 tbsp chopped celery
1/4 cup fresh thyme
1/2 cup chopped chives
2 tbsp vegetable oil
2 cups coconut milk
2 blue crabs, cleaned and washed in lime juice (optional)
5-6 pieces salted beef boiled to remove excess salt (optional)
1 whole hot pepper
Salt to taste.

Method
• Heat the oil in a large pot and add the onion, garlic, celery and fresh herbs.
• Sauté about two minutes.
• Add ochroes, pumpkin and dasheen leaves and sauté for another minute.
• Add coconut milk, crab and/or salted meat if using, and hot pepper (take care not to let the pepper burst).
• Bring to a boil and reduce heat to a simmer.
•Cook uncovered for about 35 minutes.
• Taste and add salt if needed.
• Remove hot pepper and crab and/or meat, and swizzle the callaloo. Blend in a processor or blender.
